  1. Use 3 large potatoes
  2. Prepare 3 tbsp olive oil
  3. Use 1/4 cup parmesan cheese
  4. Take 1 tsp approximately salt, pepper, garlic powder
  5. Take 1/2 tsp approximately nutmeg, paprika

Toss potatoes with oil in large bowl. Add half of the cheese mixture; toss to coat. Add diced potatoes to a pot of cold salted water. Strain potatoes and transfer back to the pot.

Instructions to make Oven fried Parmesan potatoes:
  1. Preheat oven to 425. Peel potatoes and cut lengthwise into thin strips
  2. Pat potatoes dry with paper towel
  3. Toss potatoes in a bowl with about 1 tbsp olive oil
  4. Season with salt, pepper & garlic powder and nutmeg.
  5. Drop some olive oil on the baking pan and spread it out all along the bottom of the pan.
  6. Spread potatoes in a single layer in the pan and sprinkle paprika lightly on top.
  7. Bake for 8 minutes then flip potatoes. Sprinkle 1/2 the Parmesan over potatoes. Bake another 8 minutes and flip again, sprinkling the remaining Parmesan. Keep flipping potatoes every 8-9 minutes until they are done.
  8. Done and ready to serve!

Put the lid on and vigorously shake the pot so a mashed consistency covers each potato. Rinse potatoes; drain on paper towels, then pat dry. Remove from pan with tongs; place in large bowl lined with paper towels. Toss lightly to remove excess oil. Melt the butter in a heavy ovenproof skillet preferably cast iron and add potatoes and toss until they are coated with butter.
