Ingredients and seasonings required exist for make
  1. Use 20 mushrooms sliced
  2. Take 7 cloves garlic minced
  3. Prepare 1 cup finely chopped onion
  4. Prepare 1/2 cup fresh cream
  5. Take 1/4 cup hung curd
  6. Prepare 5 tbsp Butter
  7. Prepare 2 tsp dijon mustard
  8. Take 1 cup vegetable stock
  9. Use 4 tsp pepper powder
  10. Take 4 tsp oregano
  11. Prepare 3 tbs chilli flakes
  12. Prepare 2 cups cooked rice
  13. Use 1 cup blanched Broccoli
  14. Prepare 2 carrots thinly sliced and blanched
  15. Prepare 2 potatoes wedged and boiled
  16. Take 3/4 cup finely chopped parsley
  17. Take 2 tsp olive oil

Gradually add milk mixture to hot Dutch oven, stirring with wire whisk. In a large fry pan over medium-high heat, melt the butter. Add the flour and stir to incorporate. This healthy mushroom stroganoff made with shiitake, baby portabella, and cremini mushrooms and noodles in a light creamy sauce is a quick and easy meal, perfect for Meatless Mondays!

How to make Mushroom Stroganoff:
  1. In a pan heat 2 tbsp butter, once heated add garlic and saute it till golden brown, add in onions and saute for 2 mins, add in the mushroom and season it with salt and pepper, cook for another two minutes.
  2. Add in Dijon Mustard, oregano and saute for 30 seconds, tip in the curd and mix properly, now add in chilli flakes and fresh cream and simmer for a minute. Add in the vegetable stock and simmer for another 5 minutes. Adjust seasoning according to your taste.
  3. Heat a different pan and add a tbsp of butter, add in the veggies, season it with salt, pepper, chilli flakes and oregano, toss for a minute and keep it aside.
  4. Heat a pot and add 2 tbsp butter with 2 tsp of olive oil, add in the chopped parsley and season it with salt and chill flakes. Saute it for 30 seconds and add in the boiled rice. Mix it thoroughly and serve with the mushroom Stroganoff and tossed veggies.

Turn down the heat under the mushroom mixture, add the mustard and stock. Let this bubble away for a few minutes, then stir in the crème fraîche.
