  1. Prepare 2 Japanese or Chinese eggplants (you can use other style eggplant)
  2. Take 2 tablespoon miso
  3. Take 1 tablespoon mirin
  4. Prepare 1 teaspoon sake
  5. Take 1 teaspoon sugar

What Miso to Use A classic Miso Dengaku uses red miso or hatcho miso ( see my recipe ). Meanwhile, whisk your miso paste, sake, mirin and sugar together in a small bowl until you achieve a smooth consistency. Take your eggplant halves out of the pan - and place them on top of a foil lined baking sheet with the skin facing down. Brush each piece generously on top with the miso glaze.

  1. Add all the sauce ingredients together and set aside.
  2. Cut eggplant in half lengthwise and slits the flesh in crosswise pattern about 1/8 to 1/4" deep. Make sure not to cut all the way thru the eggplant.
  3. In a pan, add some oil and fry eggplant with flesh side down on medium to low heat for about 10 minutes (fry longer ~20 minutes if using Italian style eggplants). Drizzle some oil on the outside of eggplant and spread it evenly across.
  4. After 10 minutes, eggplant should look cooked and slightly caramelized on the inside. Spread miso on top of eggplant.
  5. Bake eggplant in the oven for another 5 to 10 minutes at 350 degree Fahrenheit.
  6. Take out, sprinkle some toasted sesame seeds and serve warm.

Combine the Miso Glaze ingredients and whisk to combine and remove lumps. Brush the cut side of each eggplant with the oil. Score the flesh side of eggplant halves in a criss-cross pattern and place in a baking dish. After resting, use a paper towel to blot any salt and water that has exuded from the eggplant.
