Heat the oil in the skillet over medium-high heat; add the pork and thinly sliced onion and cook, stirring, until the pork is browned and onion is tender. Return the mushrooms to the pan along with the beef broth, tomato paste, and Worcestershire sauce. Remove any membrane from the pork fillet and discard. Season the meat with salt and pepper.

  1. Heat oil,then add chopped onions and crushed garlic ,and cook for 5/6 minutes.to soften slowly
  2. Add mushrooms and sherry and bring to theboil,cook for 3/4 minutes
  3. Add paprika, cream and crumbled stock cube and little pepper.Bring to boil and cook untill nice consistency. Then turn off heat.
  4. Once happy, add gherkins. season and mix well
  5. In new pan heat oil and saute strips of pork in small amounts until all cooked.
  6. Add to sauce when cooked.

Heat a large non stick frying pan until hot, add a little oil. Add pork strips and mix to coat. Remove pork and discard remaining marinade. Melt the butter and oil in heavy frying pan, (I use my dutch oven). Remove the onions with a slotted spoon to a small bowl.
